Shrimp Tacos

Shrimp Ingredients

  • 16 oz. Shrimp
  • 1/4 tsp. Harissa Seasoning
  • 1/4 tsp. Cayenne Pepper
  • 1/4 tsp. Garlic Powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 1.5 tsp. Cilantro, chopped
  • 1/2 Lime, juiced
  • 2 Tbs. Olive Oil
  • Small Soft Tortillas

Salsa Ingredients

  • 1 cup Mango, diced
  • 2 Ears of Corn, corn taken off cob
  • 2 Small Avocados, cubed
  • 2 Tbs. Cilantro
  • 1/2 Lime, juiced
  • Salt
  • Pepper

Method

  1. In a bowl mix together the harissa, cayenne, garlic powder, salt, pepper, cilantro, and lime juice with the shrimp.
  2. Heat olive oil in a pan on medium-high heat
  3. Add shrimp and cook until shrimp turn pink (about 4-6 minutes depending on their size, flipping once).
  4. Chop up mango, corn, avocado, and cilantro.
  5. Transfer to a bowl and add the lime juice, salt, and pepper.
  6. Add a few shrimp and a scoop of the salsa to each tortilla and serve with a slice of lime.
