Shrimp Tacos

Shrimp Ingredients
- 16 oz. Shrimp
- 1/4 tsp. Harissa Seasoning
- 1/4 tsp. Cayenne Pepper
- 1/4 tsp. Garlic Powder
- 1/2 tsp. Salt
- 1/2 tsp. Pepper
- 1.5 tsp. Cilantro, chopped
- 1/2 Lime, juiced
- 2 Tbs. Olive Oil
- Small Soft Tortillas
Salsa Ingredients
- 1 cup Mango, diced
- 2 Ears of Corn, corn taken off cob
- 2 Small Avocados, cubed
- 2 Tbs. Cilantro
- 1/2 Lime, juiced
- Salt
- Pepper
Method
- In a bowl mix together the harissa, cayenne, garlic powder, salt, pepper, cilantro, and lime juice with the shrimp.
- Heat olive oil in a pan on medium-high heat
- Add shrimp and cook until shrimp turn pink (about 4-6 minutes depending on their size, flipping once).
- Chop up mango, corn, avocado, and cilantro.
- Transfer to a bowl and add the lime juice, salt, and pepper.
- Add a few shrimp and a scoop of the salsa to each tortilla and serve with a slice of lime.
