Collards Collaboration with Elon Students
This past week our chefs worked with Elon Environmental Studies students to share a classic Southern ingredient with Elon students in unique ways. Elon students at Loy Farms have been working on a project to grow unique varieties of collards specifically for culinary uses, producing different flavors and tasting profiles for chefs! Led by Elon Dining Sustainability Coordinator Caroline Redick, our Elon Dining chefs were lucky to help prepare some of these beautiful collards in inspired dishes to share with Elon students.
